Sweet Potato Banana Bread

Since I had a few bananas getting overripe, the logical next step was making banana bread. This time, I wanted to do it with a twist, so I added some mashed sweet potato and golden syrup for extra warming flavors. It’s the perfect level of sweetness and so moist.

Ingredients

  • 2 medium overripe bananas

  • 1/2 cup mashed sweet potato (about 1 medium sweet potato)

  • 1/2 cup melted butter

  • 2 large eggs

  • 1 teaspoon baking soda

  • ½ teaspoon ground cinnamon

  • ½ teaspoon pumpkin pie spice

  • ¼ teaspoon salt

  • 1/3 cup granulated sugar

  • 1/4 cup golden syrup

  • 1 and 1/2 cup all-purpose flour

Instructions

  • Butter the surfaces of a 9-inch round pan and preheat oven to 350 F

  • Mash the bananas and sweet potato with the melted butter. Stir in the beaten eggs, and all the other ingredients in order. Add the flour last, so as not to overmix it

  • Pour batter into the pan and bake for 45 minutes to 1 hour. Make sure a skewer/chopstick inserted in the middle of the cake emerges clean
