Frozen Protein S’mores

Sometimes healthy can also be indulgent. We’ve been eating way too much ice cream lately and are obsessed with s’mores…so figured we’d try a light frozen protein snack. Actually so delish.

Ingredients

  • Graham crackers (I used Annie’s honey grahams)

  • 1 container So Delicious coconut whip topping

  • 1 tsp vanilla extract

  • 2 scoops of protein powder (I used Ora So Lean & So Clean chocolate flavor)

  • 1 scoop of powdered peanut butter (PB2)

  • 1/3 cup bittersweet chocolate chips (melted with 1 tsp neutral oil)

  • Nut butter caramel layer

    • 2 Tbsp peanut butter

    • 2 Tbsp almond butter

    • 2 Tbsp maple syrup

Instructions

  • Line an 8x8 dish with parchment paper

  • Put 1 layer of graham crackers (this comes out to 4 and 1/2 for me)

  • Mix coconut whip, vanilla extract, protein powder, and powdered peanut butter until smooth. Spread evenly on top of graham crackers

  • Drizzle melted chocolate like stracciatella gelato onto the whip spread

  • Mix peanut butter, almond butter, and maple syrup until smooth. This is pretty thick, so it’s much easier to spread directly onto the too layer of graham crackers before placing those on top of the s’mores

  • Freeze for at least 3 hours before enjoying!
